DIY your own Frozen 'Pumpkin' Waffles

I don't know about you - but school mornings are CRAZY for me! I make a large batch of these, freeze them, and throw them in my freezer to grab!
Its PERFECT!!! 

Pumpkin Spice Waffles
The perfect, crunchy on the outside, soft in the middle waffles! 
YUM


Ingredients

2 1/2 C White whole Wheat Flour 
(I would have done half spelt flour, but I was in a hurry and didn't have time to grind it)
2 Tbl of Ground Flaxseed
4 tsp Baking powder
2 tsp Baking Soda
2 1/2 tsp Cinnamon
3/4 tsp Ground Nutmeg
3/4 tsp Ground Ginger
1/8 tsp Ground Cloves
1 tsp Salt
2 Tbl Honey, Maple Syrup, or Agave nectar
1/2 tsp Vanilla
1 1/2 C Puree'd Pumpkin (not pumpkin pie mix!)
2 - 2 1/4 Almond, soy, or cows milk
2 Tbl of Orange Juice (optional)


Place the flaxseed in a 1/2 cup measuring cup. Fill to top with water and let sit about 10 minutes.

Mix dry ingredients and slowly mix in wet (including flaxseed). 
DON'T OVERMIX

After you are done, cool on drying rack completely. Place on cookie sheet and quick freeze in freezer for about 30-45 minutes. Then place in Freezer Ziploc Bags!!
Grab and warm in toaster!

Just thought I would let you know that the first thing I noticed about your blog after the adorable picture at the top was the misspelling of the word "achieve" in your description of your blog.
