Pumpkin Chocolate Chip Muffin - Simple and Low Sugar

Who doesn't love just a simple, Pumpkin Muffin??? The best thing for fall right?
Lets not go to0 overboard on the pumpkin stuff (I have that tendency)

So here is a recipe ANYONE can make and feel good about enjoying!


1 Cup Spelt Flour (or Just whole wheat flour)
1/2 C Brown Rice Flour or Quinoa Flakes (or just whole wheat flour)
1 C Oats
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Pumpkin Pie Spice
1/4 tsp Ground Ginger (optional)
1/4 tsp Salt
1/3 C Coconut Palm Sugar or 1/4 C Date Sugar (or just brown sugar is fine too!)
1 Egg
2/3 C Almond Milk
1 Cup Canned Pumpkin 
1/3 C Pumpkin Butter or Unsweetened Applesauce
1/2 Ripe Banana, mashed
1/2 Cup Chocolate Chips (or unsweetened Carob Chips for sugar free)



1) Mix dry ingredients and wet ingredients separately.  Then mix to combine. DO NOT OVER MIX
Check for sweetness. If you want them sweeter, add 2 Tbsp of Maple Syrup.
2) Fill lightly greased muffin tin 3/4 full and sprinkle with oats.
3) Bake at 350 for about 20-24 minutes.
4) Top with butter, coconut oil, maple syrup, pumpkin or peach butter. YOU DECIDE!
