Pumpkin Pie Granola. Sugar Free!

Pumpkin Pumpkin Pumpkin... mmmmm

This is a must in our house in the fall (well, really all year long)! 
Everyone in the family loves it and I love that they are eating something refined sugar free and 
VERY LOW fat! 
Full of fiber and protein. 

I prefer to use natural sweeteners as often as possible. It really is the best option for you!
So Homemade Date Honey it is!




Ingredients:
6 cups of oats
2 cups of nuts/seeds (1 c almonds, 1/2 c pumpkin and sunflower)
1/2 c flax
3/4 c cinnamon date honey
1/2 c all natural peanut butter
2 Tb melted coconut oil
1 cup pumpkin puree (just puree not pie mix)
2 tsp cinnamon
11/2 tsp vanilla
2 tsp pumpkin pie spice (I LOVE Penzeys Spices!)
If you love sweet and salty add 1/2-3/4 tsp sea or kosher salt

First make your Cinnamon Date Honey -(recipe below) 
Then Mix Dry ingredients together: Oats (I prefer gluten free), Nuts and Seeds, salt, and Cinnamon. 



Take Cinnamon Date Honey in food processor and mix in peanut butter, melted coconut oil, pumpkin, and vanilla. 




Add Date Honey mixture to the Dry Ingredients. Blend well. Lay on lightly greased cookie sheet and spread out. (Batch usually takes 2 sheets)
Bake at 300 for 50-60 minutes (DON'T BURN IT) 
Stir EVERY 10 MINUTES

When Cool it should crisp up more. If not, you can put it back in the oven for another 10 minutes. When cool stir in 2 Cups Dried fruit (raisins, cherries, apples, whatever you like) and peanut butter chips (optional, but amazing!!) I love the SUNSPIRE peanut butter chips!


Cinnamon Date Honey
1 C Pitted Dates
1 Tbsp of Cinnamon
1 CInnamon Stick
Slice of an orange (optional) (about 1/8 of an orange)

Put dates in small pot. Fill with water just barely covering them. Put rest of ingredients in.
Simmer for about 20 minutes. Take orange and cinnamon stick out and blend well in processor or blender.
